Sannam Chilli Whole — 100g
The Foundation
A classic Indian red chilli valued for the balance it brings to everyday cooking.
Sannam contributes red color, chilli flavor and approachable heat without allowing pungency alone to dominate the dish. It belongs naturally in tadkas, gravies, dals, pickles, chutneys and traditional masalas.

Teja Chilli Whole — 100g

Meghalaya Bird’s Eye Chilli — 25g
The Spark
Small in appearance. Remarkably powerful in the kitchen.
Bird’s Eye chillies from Northeast India are associated with the Capsicum frutescens group and are known for their naturally high pungency.
The sensation is distinctly different from that of a conventional dried red chilli: bright, immediate and penetrating. A small quantity can dramatically change a chutney, broth, stir-fry or intensely spiced curry.
This is the chilli to reach for when you want heat that announces itself quickly.

Bhut Jolokia — 10g
The Extremity
One of India’s great chilli traditions and one of the world’s most famous superhot peppers.
Native to Northeast India, Bhut Jolokia—widely known as the Ghost Pepper—became internationally recognized for pungency capable of crossing the one-million-Scoville threshold.
Yet treating Bhut Jolokia merely as a heat challenge misses its culinary value.
Used with exceptional restraint, it can contribute a distinctive, slowly developing intensity to chutneys, sauces, marinades and strongly flavored dishes.

How to use Whole Chillies?
Temper
Add whole or broken chillies carefully to hot oil to release their character into a tadka.
Toast
Brief dry-roasting can deepen aroma. Avoid scorching—the smoke from very hot chillies can be extremely irritating.
Soak
Rehydrate dried chillies in warm water before blending them into pastes, chutneys and sauces.
Crush
Crush immediately before use for chilli flakes with greater aromatic character.
Grind
Grind only the quantity required when making fresh chilli powder or masala blends.
Blend
Combine different varieties to create your own balance of color and heat.
Why Stone Ground?
Industrial grinding often prioritizes speed, extreme fineness, and uniformity. Stone grinding takes a more deliberate approach.
By grinding the spices gradually, it creates a naturally textured powder rather than an excessively fine, dust-like consistency. This texture disperses well during cooking while retaining a more authentic sensory character.
Stone grinding does not mean the powder will appear perfectly uniform. Minor variations in texture are natural and reflect the physical character of the spice.

Handle The Fire with Respect
Bhut Jolokia and Bird’s Eye Chillies are exceptionally pungent ingredients.
Use small quantities initially and increase only after tasting.
Avoid touching the eyes, face or other sensitive areas while handling very hot chillies. Wash hands and utensils thoroughly after use. Gloves are advisable when handling or breaking Bhut Jolokia.
Avoid inhaling chilli dust or fumes produced while grinding, roasting or frying extremely pungent chillies.
