Whole Nutmeg, Meant to Be Grated Fresh

There is a reason nutmeg has traditionally been kept whole.

Its character is released when the hard, brown kernel meets a grater — producing fine aromatic shavings with a distinctly warm, sweet and woody fragrance. Instead of giving you that character already ground and waiting in a packet, we keep our Kerala nutmeg whole.

Grate only what your recipe needs. Let the rest remain intact until next time.

From Kerala’s Nutmeg-Growing Country

Nutmeg (Myristica fragrans) is cultivated in Kerala’s warm, humid growing conditions, with established cultivation particularly across parts of central Kerala.

Our whole nutmeg is sourced from Kerala and selected as intact kernels before packing.

It is an ingredient with an interesting dual identity: the same fruit gives us two separate spices. Nutmeg is the dried kernel of the seed, while mace is the delicate aril that surrounds it.

Two spices from one fruit. Two remarkably different expressions.

Why Keep Nutmeg Whole?

Grate It When You Need It

Whole nutmeg allows you to grate the spice directly into the dish. The aroma emerges immediately, and you control exactly how much goes in.

Small Quantity. Remarkable Presence.

Nutmeg isn’t a spice you need by the spoonful. A few fresh gratings can introduce warmth and aromatic complexity without turning the dish into “nutmeg flavoured” food.

Sweet and Savoury

Perhaps nutmeg’s greatest strength is its versatility. Its naturally warm character works comfortably with desserts and baked foods, but it can also add another dimension to sauces, vegetables and savoury preparations. The Spices Board documents nutmeg’s established use across sweet foods, sauces, baked foods, confectionery, puddings and vegetable preparations.

Selected Whole

We prefer nutmeg in the form in which it makes the most sense to us: whole, intact and ready to be freshly grated.

No need to turn a beautifully aromatic whole spice into powder before its time.

The Aroma Inside a Nutmeg

Nutmeg’s fragrance isn’t simply “sweet.”

Its aromatic profile comes from naturally occurring compounds including sabinene, alpha-pinene and myristicin, among others.

Together, they contribute to the spice’s recognisable warm, woody and sweet-spiced character.

And because that character is concentrated, restraint works beautifully.

Grate. Taste. Add more only if the dish asks for it.

How to Use Whole Nutmeg (Jaiphal)

Indian Mithai & Desserts
Freshly grate a small amount into kheer, halwa, payasam, custards and other milk-based desserts.

Masalas & Gravies
Use a light grating where you want warmth and complexity without obvious heat.

Baking
Pair with cinnamon, clove or other warming spices in cakes, biscuits, cookies and festive bakes.

Beverages
A very light grating can add aromatic warmth to suitable milk-based and other hot beverages.

Sauces & Savoury Cooking
Experiment with a small amount in creamy sauces and vegetable preparations where a rounded warm-spice note works well.

Tip: Start with less than you think you need. Freshly grated nutmeg has considerable aromatic presence.
