The Deep, Aromatic Character of Kerala Cloves
There are spices that sit quietly in a recipe. Clove is not one of them.
Known across India as Laung, cloves bring an unmistakable warmth to food — sweet at first, then woody, spicy and lingering. Moreover, when used whole, even a few buds can transform the aroma and depth of an entire dish.
Our Kerala Cloves are selected for exactly that character: whole buds with a naturally rich fragrance and the intensity that good cloves should possess.
From biryani and pulao to chai, masalas, curries and festive sweets, this is a spice designed to be used sparingly — and noticed immediately.
Why You’ll Love Them
Naturally Rich, Warming Aroma
Open the jar and the first thing you notice is the fragrance.
Add them to warm oil, slowly simmer them in a curry or gently crush them for a masala, and their fragrance begins to unfold.
Warm. Sweet-spiced. Woody. Gently peppery.
Whole Buds, Remarkable Intensity
Cloves are not seeds or pieces of bark.
They are the dried, unopened flower buds of the clove tree (Syzygium aromaticum).
Those tiny buds carry remarkable aromatic concentration, which is why only a small quantity is normally needed in cooking.
Instead of grinding them in advance, we keep our cloves whole. This way, their aromatic character remains protected and, more importantly, is released when your recipe actually calls for it.
Sourced from Kerala
From source to jar, the objective is simple:
Preserve the spice as a spice — not process away the character that makes it special.
What Makes Our Kerala Cloves Different?
Although a clove may look small, its true quality goes far beyond appearance. In fact, much of what makes a good clove exceptional is something you cannot see in a product photograph:
its aroma.
Over time, cloves can gradually lose their aromatic intensity through prolonged storage, poor handling or unnecessary processing. Therefore, we prefer them the way nature gives them to us.
Whole buds.
Carefully selected.
Naturally aromatic.
No unnecessary processing.
Break or gently crush a clove and its fragrance becomes noticeably more pronounced.
That concentrated aroma is exactly why cloves have remained one of the most distinctive spices in Indian kitchens for generations.
A Flavor That Unfolds in Layers
Clove is often described simply as a “strong” spice.
But good cloves are considerably more nuanced.
Sweet
A naturally sweet-spiced opening that works beautifully with cinnamon, cardamom and nutmeg.
Warm
A deep warming character that gives slow-cooked dishes their comforting aromatic foundation.
Woody
An earthy, woody undertone provides structure and depth.
Peppery
A subtle sharpness develops toward the finish, giving cloves their unmistakable intensity.
Together, these characteristics explain why cloves work so beautifully across the kitchen — from savory dishes and spice blends to warming beverages and, finally, aromatic desserts.
